Takashimizu brewery is located in the heart of Akita prefecture, where three rivers gather, a place known as being the source of the purest water since the time of the Samurai. Pure Dusk is the Junmai Daigingo selection of the Pure Series. It is the highest quality designation for sake. It must be made from rice with at least 50% of the rice polished away and using only rice, water, koji, and yeast in the brewing process.
